Vietnamese Spring Roll Sos Hijau
Ingredients:
1 pack of spring roll wrappers
1/2 lb of cooked shrimp, peeled and deveined
1/2 cup of chopped cooked pork
2 cups of bean sprouts
1/2 of a cucumber, julienned
1/2 of a carrot, julienned
1/4 cup of chopped cilantro
1/4 cup of chopped mint leaves
1/4 cup of chopped Thai basil leaves
1/4 cup of chopped peanuts
1/4 cup of fried shallots
1/4 cup of fish sauce
1 lime, juiced
2 tablespoons of sugar
2 tablespoons of sliced garlic
2 tablespoons of sliced red chili pepper
Instructions:
First, make the dipping sauce by combining fish sauce, lime juice, sugar, garlic, and chili pepper in a small bowl. Stir until the sugar is dissolved.
Next, prepare the ingredients for the spring rolls. Soak the spring roll wrappers in warm water until they become pliable, then place them on a clean surface.
Add a small handful of bean sprouts to the center of each wrapper, followed by a few pieces of shrimp and pork, cucumber and carrot slices, a pinch of cilantro, mint, and basil, and a sprinkle of peanuts and fried shallots.
Roll the wrapper tightly around the filling, tucking in the sides as you go.
Serve the spring rolls with the dipping sauce on the side, and enjoy!
