Ingredients:
4 packs instant noodles
2 tablespoons oil
3 cloves garlic, minced
1/2 onion, sliced
1/2 pound chicken, sliced
1/2 pound shrimp, deveined and peeled
2 tablespoons sweet soy sauce
2 tablespoons oyster sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
3 eggs, beaten
Green onions, sliced
Instructions:
Cook the instant noodles according to the package instructions and drain.
Heat the oil in a pan and sauté the garlic and onion until fragrant.
Add the chicken and shrimp and stir-fry until cooked.
Add the sweet soy sauce, oyster sauce, salt, and black pepper and stir-fry for another minute.

4 chicken thighs
8 cups water
2 stalks lemongrass, bruised

8 hard-boiled eggs, sliced
2 cups cooked rice vermicelli
Fried shallots, for garnish
Instructions:
In a pot, bring the water to a boil and add the chicken, lemongrass, kaffir lime leaves, bay leaves, ginger, onion, garlic, salt, and pepper.
Simmer for 30 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and let it cool. Shred the meat and set aside.
Strain the broth and discard the solids.
Place the bean sprouts, egg slices, and rice vermicelli in a bowl.
Pour the hot broth over the ingredients in the bowl.
Add the shredded chicken on top.
Garnish with fried shallots and serve hot.
