Here's what you'll need for this recipe:
- 500g of beef
- 1 jar of bamboo shoots
- 2 cans of coconut milk
- 2 stalks of lemongrass
- 10 dried chillies, soaked in hot water
- 5 fresh chillies
- 6 cloves of garlic
- 1 inch of ginger
- 1/2 onion
- 1 tsp of salt
- 1/2 tsp of turmeric powder
- 1/2 tsp of sugar
Instructions:
- Clean and chop the beef into bite-sized pieces
- Peel and slice the onion, garlic, and ginger
- In a blender, blend together the soaked and fresh chillies into a paste
- Heat up a large pot and add in the sliced onions, garlic, and ginger. Saute until fragrant
- Add in the chilli paste and stir for a minute
- Add in the beef and stir until it's browned on all sides
- Add in the bamboo shoots, coconut milk, lemongrass, salt, turmeric powder, and sugar
- Bring to a boil, then reduce the heat and let simmer for 30 minutes or until the beef is tender
- Serve hot with steamed rice!
